Brabazon Restaurant's Head Chef Adrian shares his recipe for these indulgent pancakes with warm maple syrup, just in time for Pancake Tuesday is this Tuesday 28th February.
220grams Self Raising Flour
450ml Butter milk
40grams rolled oats
Combine the self raising flour, caster sugar, rolled oats and pinch of salt in a bowl.
Beat the eggs and butter milk together, then pour the mixture into the dry ingredients and stir to blend.
Heat a non stick frying pan on a medium heat, add oil and drop the mixture from a large spoon or ladle.
Cook until the first side is golden brown, or until the top surface bubbles and is dotted with holes. Flip and cook until the other side is golden brown.
Continue with remaining mixture to make a stack of 6 pancakes. Pour warm maple syrup over the pancake stack and garnish with slices of your favourite fruit and caster sugar to dust.
