Chef Conor Halpenny of Tankardstown has qualified as one of just 5 finalists for Euro-Toques Young Chef of the Year 2015
‘Origins of Contemporary Irish Cooking’ was the theme of the dish required to compete in the Euro-Toques Young Chef of the Year 2015. Chef Conor Halpenny of Tankardstown has qualified as one of just 5 finalists, out of 30 very talented Chefs who will move on now to the next stage and cook off two courses before a panel of expert judges – this year including special guest judge CLARE SMYTH, 3 Star Chef Patron at Restaurant Gordon Ramsay.
This is Ireland’s premier culinary competition for young chefs, in search of Ireland’s best new talent. A top chef shows not only skill but also creativity, flare and a passion for good ingredients.
The competition required these young Chef’s is to dig deep creatively, first in writing – with a written entry comprising a recipe and an explanation of the concept and thought process – then by interview, at which stage the final 5 are selected.
Conor 20 years of age and a former student of DKIT, commenced working on the kitchen team at Tankardstown in March last and under mentor and award winning Head Chef Rob Krawczyk, Conor has gone from strength to strength introducing his own new dishes to the menus, where he enjoys taking the traditional methods of cooking , such as curing and smoking and uses modern technology (waterbaths, pacojets, Thermomix) to improve greatly on the balance of textures and to enhance the flavours making it something very special.
Conor has a special dish planned for the final round of the competition. All will soon be revealed....
