Meet Adrian, our talented head chef

Adrian Cassidy has been a key member of the Brabazon Kitchen team for over three years now and has been a driving force in putting Tankardstown on the Food Map of Ireland, whilst acquiring accolades of Best Hotel Restaurant in Meath for 2015 and 2016.  

Assuming the role of Head Chef, was the natural progressive step for Adrian to inject his own flair for food in to carefully created menus, which will please both the casual and the discerning diner. Dishes are based on fresh seasonal produce, from the walled kitchen gardens, and poly tunnels on the Tankardstown Estate where possible and from local and regional producers.  We look forward to wonderful new menus evolving over the coming seasons, and welcoming you to taste this talent…
